Chocolate Chai Pancakes

Ingredients

Dry

  • 40g rolled oats
  • 40g buckwheat flour
  • 15g Chai Drinking Cacao 
  • 1tsp baking powder
  • 1tsp baking soda
  • 1tsp flaxseed meal
  • 6g coconut sugar

Wet

  • 150ml almond milk
  • 10ml white wine vinegar
  • 25g applesauce

Method

  1. Blend your oats into oat flour and mix with the rest of the dry ingredients in a bowl.
  2. In another bowl pour in milk, vinegar, and applesauce and leave to curdle for a few minutes. Then pour your wet mixture into your dry and fold gently. A few lumps here and there are okay, just make sure you don’t have a lot of dry flour at the bottom of the bowl.
  3. Heat a pan and pour in 2 tablespoon of mixture per pancake. Cook on medium heat until bubbles start to form before flipping and cook for another minute or so until it is completely cooked through.
  4. Serve with coconut yoghurt, fruits, nut butter and any other toppings you may wish!
